I love salads. As part of my promise to myself to start eating healthy and taking better care of myself I have tried to incorporate at least one salad a day as a meal.
This is a great goal but a lot of people lessen the benefits of eating salad when they add toppings and dressing that have so my calories, sugar and fat they would have been just as healthy getting a burger with lettuce. The line between making a salad filling and tasting or fattening is very thin.
My biggest vice is Ranch! I can and will put it on everything but even lite ranch is about 70 calories per teaspoon! I don’t know about you but I use way more than a teaspoon of dressing.
There is this lovely bistro near my office and my favorite dish there is their tropical chicken sandwich it comes with a pecan salad with an amazing strawberry dressing.
I did a little research and after googling and trying a few different recipes I tweaked and created a combination for one I think is perfection!
Here is what you will need:
8 strawberries (frozen or fresh)
2 tablespoons of honey
2 tablespoons of apple cider vinegar
2 tablespoons of olive oil
1 tablespoon of red wine vinegar
1/2 lemon squeezed
1/4 tablespoon ground black pepper
1/4 tablespoon of salt
1/4 cup of water
First puree the strawberries. (I use my standard blender nothing special or fancy). After the strawberries are pureed you can slowly mix in the other ingredients (in the order listed), blending on low and done. It’s that simple!
This dressing is amazing and you don’t have to use a lot of it in order to really experience the flavor in your salad.
The strawberries add a sweet creaminess. You will be addicted. This recipe makes about a week’s worth of dressing so feel free to cut the ingredients in half. I don’t keep the dressing in my fridge for more than a week and a half.
Like most salad dressing the ingredients may separate upon resting so make sure to give it a good shake before you enjoy it.
